Welcome to Not Too Sweet Cake Co.!

My name is Huyen and I create desserts for people with food sensitivities like me but made them decadent and nearly undetectably dairy-free and gluten-free. I specialize in chocolate desserts, such as fudge, brownies, and chocolate cakes.

I am an Endicott, NY based home bakery, registered with NYS to bake from my kitchen. This baking journey started after being told by my doctor that I had to change my diet completely due to the fact that I’m getting too old to keep ignoring my chronic health concerns. This was a HUGE bummer because I love all things gluten and dairy, like most regular people! Now, I eat very clean and mainly home cooked meals, but any time I wanted to “indulge” and satisfy my sweet tooth, I found myself eating terribly dry, grainy, and not so tasty “desserts” that left me sadder than before.

So, I decided to solve my own problem by testing and creating my very own cake blends and fudge recipes, all inspired by my Vietnamese heritage and a mix of modern takes on classic flavors.
